派對美食蟹肉餅 
Crab Meat Cakes

 

材料 Ingredients
蟹肉 500克 Crab meat 500g
紅甜椒 1個 Red bell pepper 1
白酒 500毫升 White wine 500ml
牛油 50克 Butter 50g
Cajun粉 2茶匙 Cajun powder 2 tsp
葱 30克 Spring onion 30g
洋葱 1/2個 Onion 1/2
細香葱 1束 Chive 1 sprig
麵包 3片 Bread 3 slices
沙律醬 100克 Salad dressing 100g
喼汁 少許 Worcestershire sauceto taste
Tabasco辣椒汁 少許 Tabasco sauceto taste

製法

1.白酒、紅甜椒加入鍋內,煮至白酒收乾。
Place the red bell pepper and white wine in a pot. Cook until the white wine becomes evaporated.
 
2.紅甜椒壓成蓉。鑊內煮溶牛油,加入Cajun粉拌勻。
Mash the red bell pepper. Melt the butter in a pan. Add the cajun powder and mix well.
 
3.牛油汁以小火略煮片刻,備用。
Cook the butter sauce over low heat for a while. Set aside.
 
4.細香葱、洋葱及葱切碎,與一半沙律醬在碗中拌勻。
Chop the chive, spring onion and onion and mix with half portion of salad dressing in a bowl.
 
5.麵包切粒,與葱醬拌勻,靜待1小時。
Dice the bread and mix well with onion dressing, rest for 1 hour.
 
6.蟹肉與麵包混合物拌勻。
Combine the crab meat with the bread mixture.
 
7.加入喼汁、辣椒汁及餘下沙律醬拌勻。
Add the Worcestershire sauce, Tabasco sauce and remaining salad dressing and mix well.
 
8.蟹肉混合物搓成球狀。
Shape the crab meat mixture into balls.
 
9.在蟹肉餅淋上牛油汁。
Drizzle the crab meat cakes with butter sauce.
 
10.蟹肉餅置180℃焗爐焗12分鐘,伴甜椒蓉享用。
Bake the crab meat cakes at 180℃ oven for 12 minutes. Serve with mashed bell pepper.
 

小貼士Tips

.加入手撕及粒狀蟹肉,口感更豐富。
.Add shredded and diced crab meat to make better texture.
