醒胃奇異陳皮蝦
天氣炎熱,令人胃口大減,最好炮製消暑果饌,營養豐富又可提升食慾。若嫌一般果饌沒新意,不妨跟海景嘉福酒店中菜行政總廚梁輝雄師傅學煮創新水果饌,以奇異果配搭炸鮮蝦,香脆可口,味道略帶酸甜,於夏天品嘗,令人食指大動。
味道酸甜增食慾
常見的水果菜式都是用杧果及菠蘿入饌,今次梁輝雄師傅來點新意,選用了奇異果配搭鮮蝦,他表示:「奇異果味道帶酸甜,與海鮮最對味,相對牛及羊等肉類的味道太霸道,會蓋過奇異果的味道。」梁師傅教路,煮水果菜式要注意烹調時間不可過長,因為水果容易腍爛,而且烹調時間愈長,出水問題愈嚴重,所以煮好後,要盡快享用。
這道菜式的味道主要來自奇異果醬汁,調製醬汁時,可加入少量生粉,將汁料調至稠身。若醬汁太稀,便難以沾勻蝦身。蝦炸好後回鑊與醬汁徹底炒勻,這步驟令蝦充分吸收醬汁的香味。之後灑上陳皮,具有額外提味之效。即食陳皮酸甜醒胃,與奇異果味道搭配得恰到好處。

芫荽段 少許 | Coriander sections little |
炸米粉 適量 | Fried rice noodles some |
陳皮碎 適量 | Dried citrus peel crumbs some |

製法
1.奇異果去皮,切成小粒。

3.蝦撲上生粉。

4.鑊中燒熱油,將蝦泡油,盛起。

5.把茄汁、糖、水、生抽及生粉調勻成醬汁。

6.一半奇異果粒與醬汁在鑊中同煮。

7.蝦回鑊,與醬汁炒勻。
