香煎龍脷配牛油汁
原條新鮮龍脷較常吃的冷藏龍脷柳矜貴得多,以牛油汁香煎更屬法國名菜。以為吃時灑點檸檬汁,已足以令魚肉更鮮甜,原來煮時直接加入檸檬,酸味帶來的清新香氣,能使鮮味更富層次。
檸檬辟腥提味
龍脷肥美啖啖肉,加上沒有碎骨,品嘗起來甚方便,是很受歡迎的食材。煎焗乃常見煮法,The Press Room總廚Wilson Wong習慣先去掉魚皮,只保留魚肉,他建議煎前先在魚身撲適量生粉,有助減少水分流失,保持嫩滑質感,亦能令煎後的面層微脆,更為香口。
為了辟腥及提升魚的鮮味,一般吃時灑上檸檬汁,但烹調新鮮龍脷,Wilson於差不多煮好時便加入開邊檸檬,熱力令檸檬的清香和酸味徹底釋放出來,辟腥效果更佳,鮮味亦更為突出。炮製具法式風味的龍脷柳,牛油扮演相當重要的角色。牛油並非用來起鑊,於龍脷差不多煎熟的時候加入牛油,濃郁的牛油香味直滲入魚肉,滋潤了魚肉,入口時更感肥美。Wilson邊煮邊把牛油汁液反覆淋上全條魚身,此舉有助均勻熟透,亦可保證魚肉能全面吸收汁料。

製法
1.龍脷洗淨去皮,印乾。

4.鍋中燒熱油,龍脷每面煎約兩分鐘至金黃色。

5.檸檬切片落鑊,與龍脷同煮。
