這道菜yoyo想把田雞換成去骨雞腿肉應該也不錯吃!!

惹味杭椒田雞腿 
Sauteed Frog Legs with Hot Green Pepper

 

材料 Ingredients
田雞腿 4對 Frog Leg 4 pairs
杭椒 6両 Hot green pepper 6 taels
紅辣椒 1両 Red Chilli 1 tael
葱白 1両 White part of spring onion1 tael
蒜 1粒 Garlic 1 clove
乾葱 1粒 Shallot 1 clove
雞湯 4両 Chicken broth 4 taels
鹽 適量 Salt to taste
雞粉 適量 Chicken powder to taste
生粉 適量 Cornstarch to taste
紹興酒 少許 Shaoxing wine some
薑 2片 Ginger 2 slices
生粉水 適量 Cornstarch water some
油 適量 Oil some
調味料 Seasoning
蠔油 少許 Oyster sauce some
雞粉 少許 Chicken powder some
糖 少許 Sugar some
生抽 少許 Light soy sauce some

製法

1.田雞腿除去小腿骨。
Remove the shinbone of frog legs.
 
2.以鹽、雞粉及生粉醃5分鐘。
Marinate with salt, chicken powder and cornstarch for 5 minutes.
 
3.杭椒洗淨,瀝乾。
Rinse the hot green pepper and drain well.
 
4.杭椒除籽。
Remove the seed of the hot green pepper.
 
5.鑊內燒熱油,爆香杭椒,取起。
Heat oil in a wok. Saute the hot green pepper until fragrant, remove.
 
6.鑊內燒熱油,田雞腿炒至金黃,取起。
Heat oil in a wok. Saute the frog legs until golden brown and remove.
 
7.鑊內燒熱油,爆香蒜、薑、乾葱。
Heat oil in a wok. Saute the garlic, ginger and shallot until fragrant.
 
8.加入紹興酒、雞湯及調味料。
Add shaoxing wine, chicken broth and seasoning.
 
9.放入田雞,煮3分鐘。
Add the frog legs and cook for 3 minutes.
 
10.放入杭椒,煮1分鐘。加入紅辣椒、葱白及生粉水煮至汁稠,即成。
Add the hot green pepper, cook for 1 minute. Add the red chilli, white part of spring onion and cornstarch water and cook until the sauce thickens. Serve.
 

小貼士Tips

.謹記抹乾杭椒才炒爆。
.Pat dry the hot green pepper before sauteing.
