清爽彩虹素鮑絲
Stir-fried Vegetarian abalone with Bell Peppers
材料 | Ingredients |
素鮑魚 1隻 | Vegetarian abalone 1 |
西芹 2條 | Celery 2 rib |
芽菜 100克 | Bean sprouts 100g |
黃甜椒 1隻 | Yellow bell pepper 1 |
紅甜椒 1隻 | Red bell pepper 1 |
上湯 1杯 | Chicken broth 1 cup |
蠔油 1湯匙 | Oyster sauce 1 tbsp |
鹽 適量 | Salt some |
生粉水 2湯匙 | Cornstarch solution 2 tbsp |
油 適量 | Oil some |
製法
1.西芹切絲。
Shred the celery.
2.黃甜椒、紅甜椒切絲。
Shred the yellow and red bell peppers.
3.素鮑魚切絲。
Shred the vegetarian abalone.
4.上湯煮滾,拌入蠔油。
Bring the chicken broth to a boil, stir in the oyster sauce.
5.加入素鮑魚絲,慢火煮1分鐘,盛起。
Add the shredded vegetarian abalone, simmer for 1 minute, dish up.
6.西芹絲、芽菜放入滾水焯30秒,盛起。
Blanch the shredded celery and bean sprouts in boiling water for 30 seconds, dish up.
7.鑊內燒熱油,爆香黃甜椒絲、紅甜椒絲。
Heat oil in wok, saute the yellow and red bell peppers until fragrant.
8.加入芽菜、西芹絲炒勻。
Add the bean sprouts, shredded celery and toss well.
9. 加入鮑魚絲炒勻,下鹽調味。
Add the shredded vegetarian abalone and toss well, season with salt.
10. 下生粉水炒勻,即成。
Thicken with cornstarch solution and toss well, serve.
